These are my husband's favorite cookie since he was a little boy. My mother-in-law gave me the recipe when we first got married and I have made them every Christmas going on for almost 35 years now. They are enjoyed by our children, family, and friends at Christmas time.

Cowboy Cookies
1 cup          Shortening -  Butter Flavored
1 cup          Sugar
1 cup          Brown Sugar
2                 Eggs
2 tsp.          Vanilla
1 tsp.          Baking Soda
1 1/2 cup    Flour
1 tsp.         Salt
3 cups       Quick Cook Oats
1 cup         Finely Chopped Pecans
6 oz.          Semi Sweet Chocolate Morsels

Cream Shortening  and Sugar then add vanilla and eggs until blended.
Sift dry ingredients and add to the first mixture and beat until well blended.
On low add the oatmeal and pecans until completely mixed in.
Gently fold in the semi-sweet morsels.
Place dough in the refrigerator for 2 hours or overnight.

Preheat oven to 350 degrees
Line cookie sheet with parchment paper.
Drop a heaping spoonful of dough per cookie onto the cookie sheet and bake for 10 minutes.
Do not over bake.
